The Caboose is proud to host Chef David Israelow for an exclusive preview of Four Corners, his forthcoming restaurant in Chatham, NY.
David’s menu captures the unique transition of early spring in the Hudson Valley—where winter’s richness meets the first hints of the new season. This four-course journey features deeply satisfying flavors like crisp fried panisse canapés and melt-in-your-mouth short rib, grounded in local ingredients and elevated by French and Japanese influences.
With communal seating and a beverage program of signature cocktails and wine pairings curated by The Caboose team, the evening is designed to be social, soulful, and lingering.
Setting the vibe for the evening, Ondina + Trio will transform The Caboose into a cozy lounge setting, weaving through a soulful repertoire of jazz standards, Neo-Soul, R&B, and Bossa Nova.
Meet the Chef
With over a decade of professional culinary experience, David Israelow brings a deep passion for seasonal, ingredient-driven cuisine to the restaurant. A graduate of the French Culinary Institute and the Tokyo Sushi Academy, David has cultivated a diverse skill set that blends classic techniques with a global perspective.
David most recently served as the Head Chef and Culinary Director of One White Street, a celebrated restaurant in New York City known for its elevated farm-to-table approach. His career has also included hands-on agricultural experience as a farm apprentice at Hawthorne Valley, where he gained a deep appreciation for sustainable food systems and local sourcing.
David’s philosophy centers on creating memorable dining experiences that honor the connection between farmers, chefs, and diners.
